
I ate a lot of this soup this week. Kale & pasta soup, feat. puréed chickpeas. I have to say that I cheated and I would do it again: instead of roasting a red pepper, I bought a jar of Presidents Choice roasted peppers. IT WAS ONLY $2. A nice big fat juicy red pepper might have cost near $1. And then you have to factor in the cost of time and effort. And I still have half a jar of red peppers left over.
