
I'm going away this week so I wanted to use up all the leftover veggies in the fridge. And since I am in soup mode lately, that's what I made. Ingredients went into the soup in this order: shallots, broccoli, carrots, garlic, dill, beer, rutabaga, zucchini, tomatoes, green lentils, quinoa, pearl barley, vegetable stock, spinach and salt and pepper.

I partially blended the soup to give it some creaminess while maintaining some of the texture of the ingredients. It may be ugly, as well as a reminder that it's still always best to follow a specific recipe, but this is at least one hearty soup.
