
Using my leftover spaghetti, I made Leftover Spaghetti, a recipe somewhat modified (I used oregano instead of parsley) from Mangia with Quattro: Soak spaghetti in a mixture of eggs, oregano, salt and pepper and grated Parmesan; brown in olive oil and cover to cook through; flip over to serve crust-side up, and cut into little pizza slices of spaghetti.

(Don't forget to eat some salad too.) The only problem with this meal is that I now have leftover leftover spaghetti.
