Braised Coca Cola Pork Chops with Cheddar Mashed Potatoes & Broccoli


Last week I bought a giant new Cuisinox sauté pan from the Gourmet Warehouse. It was not so suited last night for the sautéing of one onion. However it seemed pretty decent tonight for braising some pork chops. I would show a full photo of the pan but it is far too immense to ever fit in the frame. But you can see my shoes reflected in it here.


So I salted and peppered some pork chops, seared them and then cooked them in the gallons of leftover sauce from last week's Coca Cola pork roast. It could just as easily be called Apricot Jam pork, since a whole cup of that went into the sauce as well. Anyway.


I left the pork chops simmering and took a nap; upon waking I decided it was a good idea to chop up an apple and throw it in. Eventually the pork chops began falling apart as I turned them, at which point I knew it was time to eat.


We'd planned on making two batches of perogies last night, but halfway through we ate the first batch and then couldn't move. So I had quite a lot of leftover cheddar potato mash.


Which made excellent mashed potatoes to accompany the pork chops, with some broccoli on the side.
