Madras Lentil Tomato Pepper Tofu Couscous

I constructed tonight's dinner out of green peppers, half a can of whole tomatoes, tofu seasoned with coriander, cumin, salt, pepper and garam masala, a Trader Joe's packet of Madras Lentil, and accidentally over-salted, slightly undercooked Israeli couscous. If I'd let it all simmer together for another half hour it might have been good, but my belly was impatient.
