Kale and Avocado Salad


Tonight I made a salad from my friend Sonya's blog, who eats only raw foods (except that one time I forced her to dine at Checkers). I'm not going to bother writing out the recipe, since you can watch it here. It was a very tactile experience . . . it was my first time preparing a meal by giving it a massage. The salad consists of finely chopped kale with olive oil, sea salt and avocado massaged into it, and chopped onions, sun-dried tomatoes, sweet cocktail tomatoes and fresh lemon juice. Basically, this salad is an excuse to eat a bowl of guacamole by adding kale to it.

  2. Hmmm - I'm not sure I'd like kale with avocado. Which is strange since I like both kale and avocados separately. In truth, I like my kale cooked so perhaps that's my issue.

  3. Dana: I've never cooked kale before, but apparently chopping it very finely, and then the act of massaging oil and sea salt into it helps to break down the fibers... I don't know if it was quite the same effect as cooking it would be, but it definitely isn't like chomping on raw leaves.

    Sonya: I'm pretty sure I will like anything if you throw an avocado in there. Once again it's surprising how filling raw food is, and how little of it you need to eat to feel full. No wonder you are so skinny.
